Fish Cakes Supreme

With all the classic flavours of comforting fish pie, this simple recipe makes it even easier to rustle up.

Ingredients
  

  • 2 Cups Cooked Flaked Fish
  • 1 Cup Cold Mashed Potatoes
  • 1/4 Cup Minced Onion
  • 2 Tablespoons Lemon Juice
  • 1 Beaten Egg
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1/2 Cup Soda Cracker Crumbs
  • 1 Tablespoon Cooking Oil
  • 1 Tablespoon Margarine or Butter

Instructions
 

  • Combine the first seven ingredients. Mix well. Shape into 8 – 10 patties(depending on size). Coat patties with cracker crumbs. Put oil in frying pan. Fry patties approximately 10 minutes until golden brown, turning patties once. Drain well.
