Fish Cakes Supreme
With all the classic flavours of comforting fish pie, this simple recipe makes it even easier to rustle up.

Ingredients
- 2 Cups Cooked Flaked Fish
- 1 Cup Cold Mashed Potatoes
- 1/4 Cup Minced Onion
- 2 Tablespoons Lemon Juice
- 1 Beaten Egg
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Pepper
- 1/2 Cup Soda Cracker Crumbs
- 1 Tablespoon Cooking Oil
- 1 Tablespoon Margarine or Butter
Instructions
- Combine the first seven ingredients. Mix well. Shape into 8 – 10 patties(depending on size). Coat patties with cracker crumbs. Put oil in frying pan. Fry patties approximately 10 minutes until golden brown, turning patties once. Drain well.
